Chinese Chicken Salad


Marinate 4 chicken breasts in 1/3 cup soy sauce and 1/3 cup of sugar for at least an hour and up to 48 hours. Bake in marinade at 375 degrees for about 1 hour. Cut meat into bite sized pieces when cool.

Heat several inches of oil and cook a handful of rice sticks until they stop popping. Remove immediately and drain on paper towels. Cook about ½ the package. Cut up 1/3 package of won ton skins into bite sized pieces. Fry in hot oil until brown. Remove immediately and drain on paper towels. (These two items can be made several days ahead of time and stored in zip lock bags.

Tear one head of lettuce into pieces and put in a large bowl. Add chicken, 4 chopped green onions, 4 Tablespoons slivered almonds, and 1/8 cup toasted sesame seeds.

Chinese Chicken Salad Dressing

Mix together:
½ cup salad oil
2 teaspoons Accent
2 teaspoons salt
2 Tablespoons sesame oil
2 Tablespoons sugar
1 teaspoon pepper
¼ cup rice vinegar

Pour over salad ingredients. Add rice sticks and won tons. Toss and serve.
