Spicy fried chicken cutlets

Last night I tried a recipe I saw on Food TV; Spicy fried chicken cutlet. Delicious comments from DH, DD, and son in law. 4 chicken breasts between plastic wrap and pounded with rolling pin till thinner. Mix 2 cups buttermilk, 1-2 tsp bottled hot sauce, salt and pepper together and marinate chicken in this for several hours. Actually the recipe calls for 15 min but I had to leave for 2 hours so left it. Remove from fridge and let sit as you measure out 3 cups flour mixed with salt and 1 tsp cayenne pwd. measure 2 cups plain bread crumbs into seperate shallow pan. Roll one ch. br. in flour mix and then re dip into buttermilk and roll in bread crumbs. Set on sheet wax paper. Same with remaining chicken. Heat 2-3 Tb oil in skillet, med hot and cook on each side 3 min til golden brown. I set this on absorbent paper and set in warm 300 oven while I made salad, set table, etc. You can make this as spicy as you want with the cayenne. Serve with the bottled hot sauce available. Very tender and good.
