Ingredients
To make the Rice:
2 cups jasmine rice
2 cups canned coconut milk
2 cups water
Microwave for approximately 15 minutes on high in a large covered bowl.
To make the Pudding:
Rice from above
2 eggs
1 cup sugar
2 cups coconut milk
1 cup shreded coconut
1/2 tsp. nutmeg
1/2 tsp. cardamom
1 tsp. vanilla
Procedure
Mix together all ingredients and bake in a covered casserole dish at 350F for 30 minutes. Optional, remove lid 5 minutes before end of cooking time and sprinkle 1/4 cup coconut on top, turn oven to broil and toast coconut for the last 5 minutes of cooking time.
