Carrot Pineapple Cake

Spokane, WA(Zone 5b)

2 cups flour
2 teaspoons baking powder
1 1/2 teaspoons soda
1 teaspoon salt
3 teaspoons cinnamon
2 cups sugar
1 1/2 cups oil
4 eggs
3 cups grated carrots
13 oz can crushed pineapple (include juice)
1/2 cup chopped walnuts

Preheat oven to 350 degrees.

Sift together flour, baking powder, soda, salt and cinnamon. Add sugar, oil and eggs. mix well. Add carrots, pineapple and nuts. (reserve 1 Tablespoon pineapple juice for frosting) Stir together. Bake in a 9" x 13" pan for 50 to 55 minutes. Cake will appear very dark.

Cream Cheese Frosting:

1/4 cup butter, softened
4 oz cream cheese, softened
1 teaspoon vanilla
1 Tablespoon pineapple juice
Powdered Sugar (enough for frosting consistency - about 1/2 a box)

Beat together margarine and cream cheese, add vanilla & pineapple juice, Spread on completely cooled cake.
