I'm thinking or writing a cookbook

New Orleans, LA(Zone 9a)

and I'd like some feedback on how these recipes read. Are they easy enough to follow? Have I overlooked something? I rarely follow recipes myself, so I'm not very confident in knowing that I've written them well. I've specifically posted two that have an unusual ingredient (oyster mushrooms) because I want to get a response on that, too.

My ethinic background is Cajun, but the recipes I'm thinking of using aren't necessarily easily pegged as such (or any other specific genre, for that matter).

And the oyster mushrooms I chose because my grandmother taught me how to collect them and I see them in the gourmet section and specialty grocery stores, but I've found very few people know what to do with them.
