Found a recipe in Country Living and tried it out; had to modify it as I didn't have the kind of cheese or peppers they called for but it was pretty good. A little time consuming but what the heck these cold icy days leaves one stuck indoors pretty much anyway. The recipe called for a Manchego cheese; anybody familiar with this? I used a fresh white Mexican cheese (queso fresco) and some cheddar.
