White Christmas Fudge (after Christmas)

Carlisle, PA(Zone 6b)

White Christmas Fudge
2 ½ cups confectioners sugar
2/3 cup of milk
¼ cup butter
12 oz white chocolate coarsely-chopped (Nestles white kisses or white chocolate, coarsely chopped up)
½ tsp Almond Extract
¾ cup dried cherries, cranberries,apricots or maraschino cherries, drained & coarsely-chopped.
¾ cup toasted almond slices (3 oz pkg of sliced almonds)(toast @ 350 degrees F. 5-10 minutes,
shaking the pan to brown both sides of almonds)
Line an 8" square pan with aluminum foil, grease foil with butter.
Mix conf sugar & Milk in a heavy 3 quart saucepan over medium heat. Add butter, stirring constantly.
Bring to a boil & boil for 5 minutes.
Over low heat, add white chocolate & almond extract. Stir, then whisk until chocolate melts & mixture is smooth. Stir in fruit & toasted almonds.
Pour mixure into prepared pan.
Refrigerate for 2 hours or until firm.
invert pan, peel off foil, cut into 1 inch squares. Makes 36 squares. Garnish as desired.

I made this for the first time and it was an immediate hit, very easy to make, quite smooth & sweet tasting, without the taste of chocolate. Hope you enjoy it as much as we do.
