Need recipe to make Italian Sausage

Buffalo, WV(Zone 7a)

Hi folks, almost time to have the hog slaughtered and need a recipe to make Italian sausage. The butcher makes regular sausage but not the Italian, which I use a lot of, so thought I would have him leave some pork ground but without seasonings to make my own. Would appreciate any ideas.
