Homemade - Best Pimento Cheese
8 ounces of sharp cheddar cheese
1 4-ounce jar pimento
1/3 cup Duke's mayonnaise
Grate cheese and let stand at room temperature for an hour.
In a food processor, puree pimentos and their juice into a smooth paste with no chunks. Add mayonnaise and puree again. Add cheese and blend thoroughly until smooth. Refrigerate for at least one hour before
serving.
