need stuffing recipes please

Hello everyone = seeing as how I cant buy stove top or any prepared stuffing I was wondering if anyone has some yummy recipes that they can share with me/
Please try to keep them without brand name ingredients cause I cant get anything here
My mother used to make it here with bread celery onions and a spice that was very aromatic = i dont know what the spice is = any ideas what it was? it has a very distinctive smell that is often associated with stuffing
