Pomegranate Glazed Cornish Game Hens

I eagerly went to find this recipe from the coupon section of the paper, thinking it was a persimmon recipe I could share with Leaflady in http://davesgarden.com/t/410731/ -- Oops, turns out it was for pomegranates. Here's the recipe, anyway!

Pom Glazed Cornish Game Hens

Time to table: 1 hour, 15 minutes
Makes 4 servings

2 rock cornish game hens
1 tsp. salt
1/4 tsp. pepper
1/4 tsp. thyme
2 tbsp. pomegranate arils*
Juice from 3 pomegranates (10 oz. juice)

* The arils are the little encapsulated fruit sections.

MAKE GLAZE: To juice pomegranate, slice in half crosswise and use a citrus juicer. In stainless steel saucepan, simmer juice with pinch of salt until reduced to a syrupy glaze (about 10 minutes).

ROAST HENS:

1. Preheat the oven to 375. Season 2 hens with salt, pepper and thyme. Place on rack and roast one hour until done.

2. Brush pomegranate glaze on hens and roast another five minutes.

3. Sprinkle with fresh pomegranate arils

4. Serve remainder as a sauce
