Ok here goes another of my dumb questions, but how in the world do they get new scents for like the sages and stuff?

Laylarose~ You're opening a big can of worms here, one way(the oldest) is natural mutation. Some people call these plants "sports" or "rogues". Many times people throw away any plant that doesn't look right. Like the others. Sometimes these plants are sick, but they could be mutations that have a different color, smell, etc. You get these in almost any kind of plant if you plant large numbers of seedlings.
Then there's induced mutations intentionally caused by man,
cross-pollination w/ closly related plants, and now we have gene-splicing.
You can look for odd plants in your garden and isolate them, just in case they're just dying. Sometimes you get a pleasant surprise.
