"Baking" on top of the stove?

Efland, NC(Zone 7a)

Some of ya'll know I like to cook down here in my "shoffice". 'Smatter of fact, I luv it! However, my hand-me-down stove only has top burners that work, no oven, so I'm a bit restricted when it comes to fixing baked foods.

My head is thinking that since folks bake breads, casseroles, and such using a Dutch oven when they are camping, then I should be able to do something similar using my stove top. Heck, most of my cook pots and pans are cast iron.

I was thinking, supposing somebody (now who are we thinking of?) who hasn't had a nice juicy meat loaf in years wanted to make one and they didn't have an oven. It seems to me that the meatloaf could be put in a cast iron cook pot, put the lid on and it would become an oven, right? To keep it from burning on the bottom, maybe one of those "waffle"/flame diverters could be under that pot, eh?
Anybody ever 'baked' on top of their stove like this or will I have to sacrifice a pound of burger to discover it doesn't work this way?

Yours truly,
Hongry-for-meatloaf. (Ahh yess, with mashed taters! Yum!) (And meat loaf sammiches! with mayo, of course.)
