Salmon Zucchini Crescent Dinner Pie
1 8-ounce package refrigerated crescent dinner rolls
1 tablespoon cooking oil
1 2/3 cups coarsely shredded zucchini
½ cup chopped onion
3 eggs, slightly beaten
½ cup grated Parmesan cheese
¼ teaspoon sweet basil
½ teaspoon black pepper
1 8-ounce can salmon(remove any bone and dark skin) or
1 6 ½-ounce can tuna, drained and flaked
Place dough in bottom of ungreased 8 or 9-inch pie pan and press over bottom and up sides to form crust.
In a frying pan, saute zucchini and onion in oil. Stir until crisp tender.
Combine eggs, Parmesan cheese, basil and pepper. Stir into zucchini mixture.
Fold in salmon or tuna. Pour into crust. Bake at 375 degrees for 25 to 30 minutes or until knife inserted near center comes out clean. Enjoy!
