Creamed Onions

Payneville, KY(Zone 7a)

1 1/2 pounds small white onions (I use boiler onions found in the produce section)
2 tablespoons butter
2 tablespoons flour
1/2 tsp salt
1/8 tsp pepper
1 1/2 cups half n half or cream or a mixture of both (I like the mixture)

Drop onions in boiling water for 30 seconds to make it easier to peel them. Then drain and run cold water over them. Cut off stem end and "slip" off skins. You may have to help the skins off some :)

Boil peeled onions for approx 25 minutes (until tender).

After onions are cooked, melt butter in a large pan. Add flour, salt and pepper and cook over medium heat until bubbly and smooth. Add cream mixture and bring to a boil over lowered heat, stirring constantly(watch carefully as cream will burn if too hot). Add drained onions, mix real well and eat as a side dish.

You can add a small amount of shredded carrots, if you'd like.

You will love this and I usually have to make 4 batches for Thanksgiving :) and I sell a lot of these at the market also. :)
