What is the best cook for Hen?

I did cook that long time ago it was tough and dry so what it should be cook better for gumbo or stew??? I don't use bake for that Hen... so my friend is going to give us couple of Hens soon so I need to know what best to cook for it before I know how to use it.. LOL
