Sugary Apple Muffins

Castelnau RB Pyrenée, France(Zone 8a)

These have been a great favourite with 4 generations of my family :)

It can be eaten hot as a dessert with cream/icecream/sour cream/yoghurt/creme fraiche etc, or cold as a cake with tea or coffee (or just by itself LOL)

9 oz flour (1/2 and 1/2 wholemeal and white gives a nice texture)
3 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
1/2 tsp grated nutmeg
4 oz butter/marg
1 cup milk
4 oz finely chopped apple
6 oz sugar
2 eggs

Cream the fat with 4 oz sugar. Beat in the egg by degrees. Add the dry ingredients gradually, together with the milk. Fold in the chopped apple.
Fill greased muffin rings, or a wide round tin with the mixture
Sprinkle with the remaining sugar mixed with more cinnamon and nutmeg and bake at 425F for 20-25 minutes

If you have a food processor, you can add the peeled and cored apple in chunks to the mixture and let the metal knife blade chop the apple while it's mixing
