My DH has a get together every Sunday with friends, one which is diabetic and one who cannot have wheat (celiac). GF means gluten-free. Of course, both also love desserts, so I came up with this no-bake recipe.
1 1/2 c. peanut butter
1 c. Splenda (or add more to taste)
2 8oz pkg. cream cheese, at room temp
dash ground nutmeg
1 c. water
1 envelope of unflavored gelatine (I use Knox)
Blend together first 4 ingredients. Boil water and dissolve gelatin into it. Whip with cream cheese mixture until smooth and creamy. Chill until set.
