I took this to the KYRU and somebody wanted the recipe.
Biko, Filipino Dessert
4 cups of sweet rice soaked overnight in 6 c. cold water
1 can coconut milk
1 1/3 c. white sugar
1 1/3 c. brown sugar
3 Tbsp coconut jam
Cook soaked rice with the water with 1/2 can coconut milk and 1 1/3 c. white sugar, constantly stirring until thickened.
Grease 13 X 9 pan & press in the cooked rice.
For topping: Mix brown sugar, the rest of coconut milk and coco jam. Boil until everything melts, top the rice and bake at 350° for about 25 minutes or until topping thickens.
