for JustyouLisa - Kayanas omelette

Lisa, thank you for the ketchup recipe. Here is a traditional Greek omelette for the summer. It is called "Kayanas" - accent on "~as".

whisked eggs (say 2 for each)
very ripe sweet tomatoes cut in quarters (say 2 for each, if not too big)
salt, pepper, oregano (origanum heracleoticum, who hasn't I 'll send him, half he eats and half he plants as it contains seeds)
olive oil ( say 2 big spoonfuls for 2 people)
some feta cheese (cottage cheese will do, but not so tasty.)

Take a frying pan, put the oil in, and start simmering the tomatoes. In 5 - 10 mins, when their juices start thickening, throw in the cheese and then the eggs ( add salt, pepper, oregano) and continue stirring slowly all the way, or it may stick and burn. When cooked, and with still some juice left, serve and eat hot. Accompany with cucumber slices splashed with balsamic vinegar - (sorry Dave, no tzatziki). Good appetite!!
