4 chicken breast, bone in skin off
1 large sweet onion cut into 1/4 inch dice
1 28 oz. can of crushed tomatoes
1 can of small black pitted olives
i can sliced mushrooms
1 cup of a good red drinking wine
cornstarch
add 1/4 cup of oil to a large deep frying pan and place over medium high heat.
coat chicken breast with cornstarch. place in pan and cook until golden.
remove chicken and add onions scraping up any brown bits. cook onions until soft.
add the can of tomatoes, increase heat to high and bring to a boil.
reduce heat to a simmer and add the rest of ingredients. give it a good stir and then put the chicken back in and spoon the tomato mixture over the chicken. cover and cook for 45 minutes.
place some cooked rice in a dish. place chicken on top and spoon the tomato mixture over it.
