Yesterday my daughter and I spent the day making fresh pesto and our version of salsa verde. For the salsa verde we use tomatillos, lime juice, cilantro, garlic,anaheim peppers and onion.
The pesto was basil, parmesan cheese, hazelnuts, olive oil, parsley. For dinner then we made a white sauce and added some of this pesto, sauteed chicken and put this all over some pasta. Yummy!!!
This is the time of year that the garden is finally starting to really produce the tomatoes, tomatillos, basil, etc. We then froze and canned some of the pesto and salsa verde. I would be interested in others uses of tomatillos or tomatoes.
