Rootdoctor Babyback Ribs

Harrisville, MI(Zone 5b)

This is how I cook Ribs.
2 slabs of Pork Babyback ribs.
cut into 3 rib pieces with membrane removed from backside.
Dry Rub.
1/4 cup Chili powder
1/2 cup packed brown suger
1 tbsp ground black pepper
1 tbsp crushed red pepper flakes
1 teasp dried thyme
Place cut ribs in large plastic ziplock,add rub,shake and let sit in fridge overnight.

Sauce
In a sauce pan,add 1/4 cup oil to pan.
sautee 1 chopped yellow onion and 4 chopped cloves of garlic.
add 1 cup brown sugar
2 cups heinz kicker catsup
3/4 cup apple cider vinegar
1/2 cup thin soysauce
2 tbsp worcestershire sauce
1 teasp crushed red pepper flakes
1 teasp dry mustard
1 tbsp finely minced pepper
bring up to temp,then simmer on low for 1hr.
for a sauce that can be put in a squeeze bottle,you can mash sauce through a strainer.I make mine the night before,so it can cool.
prepare cooker,I use oak chips and twigs for smoke,they need to be soaked at least 3 hours.
I set up a small tinfoil tray for bacon.(don't tell everyone,but the vapors from the bacon,really makes the ribs!!
Slow cook at 200º,untill the rib meat starts to pull up the bone.
I have a pan of water in the back,with Cumin seeds and garlic cloves.
as the bacon cooks it gets put on top of the beans.
