guys - make your wife a dutch baby for breakfast

Rutland , MA(Zone 5b)

this is a simple receipe but it sure will impress your better half. the only cooking gear you will need is a oven proof 10 inch skillet (cast iron is the best)
preheat oven to 425 degrees.
whisk together until smooth
1/2 cup milk
1/2 cup all purpose flour
1/4 cup sugar
2 large eggs at room temperature
4 tbls butter (1/2 stick)
melt butter in skillet over medium heat. tilt the pan so the butter coats the sides. pour the egg mixture into the skillet and cook, without stirring for one minute.
place the skillet in the oven and bake until the the pancake is puffed and golden, 12 to 15 minutes.
while you take turns watching the pancake puff up over the skillet you can get some powdered sugar ready to sprinkle
over it, or maybe some very good fruit preserves of if you feel daring, slice some fresh fruit, sautee it in butter and splash with brandy or dark rum.
you have to serve this immediately as im afraid that the pancake loses its puff and therefore its drama almost immediately. this will give you 2 to 4 servings.
if you want a bigger pancake, double the receipe and melt the butter in an ovenproof 12 x 9 glass baking pan in the preheated oven. pour in the batter and bake for 15 to 17 minutes.
add a long stemmed rose and you will be her hero.
