Good Morning, all! I am drinking my water and coffee and trying to make myself get ready for work.I have so much to do today that I can't even think about it! I get off at 1:00 today and have to go open archives (no air-conditioning) and then go to a meeting at 4:30. I also have to go to 2 banks, and try to look at some koi to buy for my spousal unit's pond.. I don't think all of this is possible.
Now I'm going to mention my weird "dessert" to everyone on a low-carb diet. Since we are allowed about 3 ounces of cheese a day, I bought some soft cream cheese in a round plastic container. I put about 2 tsps of mild salsa on top and eat some of that as a snack around 8 p.m. It sounds weird, but is actually good and satisfies my cravings. I have also melted cheddar on top of chicken just before I take it out of the oven and artistically (lol) spread some salsa over that. It's delicious and gives the impression you are eating something exotic.
I think we all need to share some tips and recipes here and not dwell on the bad days. We need to support each other. Dieting takes a lot of encouragement.......
