Oven-Dried Tomatoes

Grove City, OH(Zone 6a)

Tomden asked how to dry tomatoes without a dehydrator. I happened to come across this recipe, and wanted to share it for everyone's use (what do you do with all those extra tomatoes???)

12 plum tomatoes (like Roma)
2 tablespoons olive oil
2 teaspoons fresh basil, chopped
2 teaspoons fresh thyme, chopped
1/2 teaspoon salt
1/8 teaspoon pepper

Preheat oven to 250F. Cut tomatoes in half and remove seeds. Place in plastic bags with remaining ingredients, shake to coat. Arrange tomatoes cut side down on a wire rack above a cookie sheet. Bake 5-6 hours, or until leathery. Store in airtight containers for 2 months in the refrigerator or up to 6 months in the freezer.

NOTE: you can substitute dried herbs, but use 1/2 teaspoon of each.
