Mint Ice Cubes

Wash, dry, and finely chop a handful of peppermint or other mint leaves—enough for about 1/4 cup.

Boil 2 1/2 cups water with 1 cup sugar.

When the sugar has dissolved, remove the pan from the heat and add the mint.

Cover and steep the liquid for 30 minutes.

Stir in 1/4 cup of fresh lemon juice.

Strain the liquid into a pitcher or bowl, pressing on the mint solids to release the flavor.

Freeze in ice cube trays and use the cubes in iced tea, lemonade, sangria, or mixed drinks, for a cool lift on a sweltering day.
