A Word of Caution

As one who has always LOVED salt, I would like to throw out a word of CAUTION! I ate salted potato chips, corn chips, etc., without abandon. Used plenty of salt in my potato salads, soups, (salt is a wonderful flavor enhancer!) or whatever I was cooking. Now that I have entered my senior years, I must pay for my earlier indiscretions with medications because of Hypertension and also diarrhetics for water retention (another goodie that comes from too much salt intake.). Salt accumulates in your system over the years....and problems do not show up immediately (but much later in life)!

I still love salt, and find that I just can't cook without it in a recipe. Salt brings out the flavors. However, I am very, very mindful as to how much I use. Lots of times, I use just half of what is called for. Usually, everything you buy in a fast food place is way over salted!!

Sure hope I don't sound like another "fuddy-duddy", but just a word of caution from One-Who-Knows!!!!!
