Sautéd Orange Beets

Many people do not like beets, probably because they either had only canned beets or Harvard (pickled) beets. Here's a recipe that even beet haters will love!

Ingredients:
3 large beets
2 large onions
1 Pat butter
1-2 Tbs. Olive oil
2 large juicy oranges
Salt to taste

Chop 2 large onions and sauté in a tablespoon or two of olive oil and a pat of butter for taste.

Meanwhile, peel and grate 3 large beets. Also, zest 2 large juicy oranges, and squeeze the juice into a container. Reserve the zest and juice.

When the onions are about half-translucent, add the grated beets, the orange juice, and about 1/4 of the zest.

Cover and steam in the orange juice for about 8-10 minutes, depending on how fine you grated the beets, until the beets are barely tender. Add a little salt, and any more of the orange zest of you want it a little stronger in orange taste.

Believe me, I have turned many people onto beets who swore they hated them!

PS... Be aware that the fresh beet juice runs through our systems and can definitely make a person panic at how the beet dyes color the "morning constitution", LOL!
