Last night's supper - stewed squash

western Piedmont, NC(Zone 7a)

Stewed Squash

fresh crook-neck from garden, about a dozen or so,

four small onions,

cube onions and squash, cover with water in a sauce pan, simmer for approx 15 minutes or until tender,

drain well,

add 4 T butter, 1/2 c milk, 1/4 c sugar, season with salt and pepper to taste,

place over low heat, mix with potato masher,

add a tad of flour if too runny.

Hmmm...

as I write, thinking that some chopped garlic scapes added to the mix might be good.
