Sandy Mush Herb Nursery Recipe

I got this many years ago from the owners of Sandy Mush Herb Nursery, and it's great, especially if you have fresh herbs available. I fool around with the amounts of herbs and garlic, to suit my taste, but it's wonderful just as is, and can be served hot or cold.

Garbanzo, Rice and Green Bean Salad

Cook 2 cups raw brown rice
Cook 1 cup raw garbanzo beans or use 1 can 14 oz. drained and rinsed
While rice is warm, add garbanzo beans and:
2 cups crunchy steamed green beans
1/2 cup finely (or not so fine) chopped celery
1/2 cup chives or mild onions, or a mixture (I use a mix)

In 1/2 cup olive oil, sauté
1 clove minced garlic
1 Tbs, fresh (or 1 tsp. dry) basil
1 tsp. dry tarragon (or 1 Tbs, fresh if you have it)

Add:
Juice of one lemon and the grated rind
1 tsp. dry mustard
1/3 cup cider vinegar

Mix together well and add to rice mixture. Add black olives for color. Serve with lettuce, tomatoes, a good hearty bread and a company of friends. Sprinkle all with parsley. The friends will love it!
