Favorite "Tropical" Ramakies

Mount Hermon, LA(Zone 8b)

My mother used to make these for her parties. I love them, and sometimes whip up a batch when no one is around (so I can hog them all myself - LOL).

1 Pound Bacon (cut in half, Cross-wise)

1 Can Sliced Water Chestnuts (drained)
1 Can Pineapple Chunks (drained)
1 Ham Steak (cut into bite-sized pieces)

On the end of each half-strip of bacon, layer a water chestnut slice, a piece of ham, and a pineapple chunk. Roll bacon around these pieces, and secure with several toothpicks.

Do this until you run out of bacon (or other ingredients).

Place rolled ramakies in a baking pan with sides (there will be grease) and bake in a hot oven (or broil), turning at least once, until bacon is browned/crisped.

Drain on paper towelling. Serve warm.

The taste of the bacon, along with the crunch of the water chestnut, the mellowness of the broiled pineapple, and the sweetness of the ham, is delicious.

I've thought of sprinkling the ramakies with Soy or Teriaki (sp?) sauce before baking, but haven't tried it yet.

These little appetizers seem to be the first to go at parties.
