I have leeks that are two years old and have no idea what to do with them? Could someone help. Almost decided to toss them in the compost. Debk
What do I do with these?
I grew leeks last year, wasn't too impressed with the flavor. I used mine in stir fry, soup, stew. If yours aren't woody they should be ok. Are they making seed stalks? If so, they will be interesting to see.
If I leave my leeks too long, they generally have a hard stem in the center, which I just discard, and use the rest.
If they are not woody, I'd make potato-leek soup. I also have a great recipe that uses leeks with pork chops...

As to the leek and potato soup (vichyssoise), my favorite recipe is in the NY Times Cookbook, which is packed. I have learned to cut down the heavy cream and use more chicken stock and milk. You should be able to find a good one online...
