2 cups of halved fresh or frozen strawberries
1/2 cup of chopped med. fine dates
1 cup of white grape juice (simmered down from 2 cups)
1 teaspoon lemon rind grated
1&1/2 tablespoons lemon juice
dash salt (optional)
1/2 cup pecans or walnuts
Combine all ingredients except nuts in a deep saucepan. Simmer over low heat until fairly thick. Stir in nuts. Return to heat and continue to cook until thick, stirring frequently to prevent sticking. Remove from heat. Pour into hot, sterile 1/2 pint jars, leaving 1/2 inch headspace. Cap with hot sterile lids. Process in boiling water bath for 5 minutes after water returns to a boil. If any jars fail to seal, refrigerate and use within 10 days.
