Ingredients:
1 each pie shell, deep dish, unbaked
1 medium onion, chopped
1 tablespoon butter
2 cups Swiss cheese, shredded
1 pound Maine lobster meat, chopped
5 each eggs
2 cups light cream
1/4 teaspoon salt
Preparation:
Line unpricked pastry shell with double thickness of
heavy-duty foil. Bake at 425° for 10 minutes. Remove foil
and set aside.
In a small pan sauté onion in butter until tender.
Sprinkle Swiss cheese in crust, then top with lobster and
onion.
In a bowl, beat eggs, cream and salt, then pour over lobster
mixture.
Bake at 350° for 45 to 50 minutes. Let stand 5 minutes
before cutting.
