Blackberry Dumplings

Brewers, KY(Zone 6b)

Strawberries can be used also. Lots of work here, but oh so good!

1-(18.1/2oz) box of yellow cake mix
2 eggs
2 cups water
1 Heaping teaspoon baking poweder
2&1/2 cups flour
1 gallon of blackberries, cleaned
Water to cover berries
2 cups sugar
1/2 cup real butter
pinch of cinnamon


Make a dough by blending cake mix, eggs, water and baking powder in an electric mixer. Add flour and continue blending by hand. (Dough will be stiff)

In a large pot, place berries, water, sugar, cinnamon and butter. Bring to a boil, lower heat and simmer for 25 minutes, stirring often to prevent sticking. When berries are cooked down, mash and strain, using a cheesecloth lined seeve. (wetting cheese cloth first helps keep it in place) Spoon berries in cloth, gently crushing berries to release the juice. Return strained juice to the pot and heat to a gentle simmer. Drop dough in juice by Tablespoon fulls, leaving 2 inches of space, as they triple in size. Cover and cook over low heat for 5 minutes. Uncover, flip dumplings and cook 5 more minutes or until dumplings are done. Remove the cooked dumplings to a large bowl and repeat process with remaining dough. Cook down berry juice to desired thickness on med. heat, stirring to prevent burning. To serve, spoon berry juice over dumplings.

Be prepared, you kitchen will be a mess after doing this. Don't attempt this if you have company coming...close all curtians and don't answer the door if someone drops by, believe me, you will want to crawl under the table.
