German pancake/crepe substitute (low carb)

Newark, OH(Zone 5a)

This is for all those of us who are doing the low carb.

1/4cup of soy flour
3 eggs
whipping cream

Mix soy flour and eggs together and then add enough whipping cream to make it really runny. Get a frying pan nice and hot and spray with pam or use butter. Pour enough of the mix in the pan and swirl the pan around until it spreads out and gets really flat. Let brown, flip and let brown on the other side. Fill with your favorite filling (meat, sugar free jelly, whatever) to get your bread substitute. It tastes just a bit off but it's not really bad, especially if you make a dessert out of it and spread maybe 1 teaspoon of jam on it or something like that.
Makes about 6-10 small pancakes/crepes at about .6 - 1gram of carbs each.
