Mama's Oyster Stew

Oyster Stew

Blend together 4 T. of flour and 4 T. of butter over low heat, slowly add ½ gallon of milk (should be at least 2% - - but I prefer whole milk for this). Don’t boil - - cook it over low heat.

Take anywhere from 1/2 pt. to 1 pt. oysters and strain them and save the juice. Then clean them in water being sure to remove all the sand. (I usually cut up any large ones) Then put the juice and oysters in a small pan and cook until they ripple. Add the oysters and juice into the milk mixture.

Add celery salt, pepper, and regular salt to taste

Don’t cook too hot or it will curdle.

Serve w/ oyster crackers
