How to toast coconut?

I just came across a recipe for white chocolate oatmeal cookies. It calls for 1 cup toasted coconut. Having never toasted coconut, can I just put a cup of plain? Or will that leave strings in the cooky? these sound so yummy. How does one toast coconut if you think its important in the recipe? I looked in my cookbooks, but no luck.
