Salmon with Mustard Maple sauce

My DH made this...the sauce is wonderful..could put it over any fish...or chicken....yummy

Salmon with Mustard Maple Sauce

4- 6-7 oz salmon fillets (thick) skinned
1 tablespoon veg. oil
3 tablespoon water
2 tablespoon Dijon mustard
2 tablespoon pure maple syrup---or other syrup
2 garlic cloves finely chopped
2 teaspoons mustard seeds
1/4 cup chopped scallion greens.
dry dill ......on top

Pat salmon dry and season with salt and pepper. Heat oil in a 12 inch non stick skillet over moderately high heat until hot but not smoking, then saute salmon in 2 batches starting with skinned sides up and turning over once, until just cooked through 6-9 minutes per batch. Transfer to a platter and keep warm, covered.

Remove skillet from heat and cool one minute. In hot skillet-- Whisk in remaining ingredients and salt and pepper to taste...Pour sauce over salmon...sprinkle with dryed dill weed..

He only made a 1/2 for two...yummy
