Cooking beef tongue

My husband has a friend who is Czech and is in the National Guard with him. He has been asking us for our beef tongues for a year and dh kept forgetting to take to drill for him. This weekend he finally remembered and took the tongues on Saturday. This guy brought them back on Sunday - they are absolutely wonderful. He cooks them three different times and on the final time, he added seasonings. He also does something with sea salt. I'm not exagerating, the meat is "mouthwatering" good. Does anyone know what I'm talking about?
