Royal Frosting

This is the stuff you make for creating frosting decorations for cakes or cookies. There is a superb recipe included in most meringue powders, but if you need a different one, try:

Sift 3 cups confectioners sugar.

Whip 2 egg whites (or reconstituted powdered egg whites) with a pinch of salt, adding the sugar gradually, to the stiff peak stage. A drop or two of glycerin can be added if desired.

Add color as desired. If pure white is desired, add just a tiny drop of blue color, otherwise this icing tends to gray as it ages.

Yield: about 2 cups

Apply with a pastry bag and decorating tips to be very creative and artistic, but keep in mind it dries very hard, and it looks better than it tastes :)
