this is per shoe's request - we were discussing it on chat this evening....it is a cream of potatoe soup made with leftover mased potatoes that shoe dubbed "scream of potatoe soup" due to a typo...
2 cups mashed potatoes
1 onion
garlic (a couple of cloves?) shoe's suggestion...
1 cup frzn corn
3-4 potatoes - cubed and boiled
2 cups chicken broth (or 1 can)
1/4 cup sherry (or more to taste)
2 cups milk
1 cube butter
1/4 c flour
salt and pepper to taste
a dash (1/2 tsp at the most) of nutmeg
melt the butter and sautee the onion, at this point you would also sautee the garlic. then add the flour and stir it around, add the broth and stir it around, then start adding the mashed potatoes with a spoon, and whisk it till smooth, continue adding the mashed potatoes and whisking till all the potatoes are incorporated. add the cooked potatoe cubes, zap the corn in the microwave and toss them in, then lastly add the milk and sherry. I also threw in some parmesan cheese, of course I forgot to say salt and pepper to taste, and I also put in a dash of nutmeg
it is really really tasty. ( well, I cant say how it would be with the garlic, but I am sure it will be good)
I have to say, the sherry really gives it a very good flavor
