Sweet Potatoe Pie

Bel Air, MD(Zone 6a)

This is my friend Lucille's recipe. Today I baked 7 pies.

8 lb. sweet potatoes
3 sticks butter
2 cans pet milk, plus 2 cans water
8 eggs
2 lb. brown sugar
2 tbs. vanilla
Nutneg to taste
Cook potatoes and run thru a foley to get rid of all
strings, add butter to potatoes while hot and mix the
milk and hot water. eggs, 2 tsp. vanilla and brown sugar
add nutmeg to taste. bake at 350 degrees
She gave me a little tip, so as not to have soggy bottom crust, bake pie shell for about 11 min and then add mixture.
This goes for any type pie. Good Idea don't you think.
We ate one pie today and boy was it delicious.
