Candied orange peel

ingredient list:
Peels of three oranges (thick peels preferred) sliced into 1/4 inch slices pith removed. Lemon peels may be substituted.
water
2 TBSP light corn syrup
3 1/4 sugar

peels of three oranges (thick peels preferred) slice into 1/4 inch slices, remove most of the white pith and discard .
Put peels into (non-aluminum) sauce pan, cover with water and bring to boil, lower heat and simmer for 15 to 20 minutes. Drain, reserving 3/4 cup of water.
In Sauce pan (non-aluminum)cook on medium heat the 3/4 cup of reserved water, 2 TBSP light corn syrup, and 2 1/4 cup of sugar, stirring constantly until dissolved.
Add peels, simmer,stirring occasionally, 40 to 50 minutes until peels are translucent and tender.
Remove to drying rack, drain 5 to 7 minutes, separate peels.
Dry about another hour or so.
Put remaining sugar (1 cup) into bowl, add peels and toss until evenly coated.
Air dry several hours or overnight.
Stores in airtight container up to one month. Or freeze in bags for up to 6 months. Yummy or use in fruitcake.
