3 C. 100% bran cereal( I use All-Bran)
2 eggs, slightly beaten
2 C. buttermilk
1/2 C. oil
1/2 C. honey
1/2C. brown sugar(packed)
2 1/2 C. flour
2 1/2 t. baking soda
1/2 t. salt
1 C. raisins
Stir in one cup boiling water into bran cereal. Set aside. Beat eggs, buttermilk, oil, honey, and brown sugar in large bowl.Add mixture of flour, soda, salt, and raisins. Add bran cereal too. Store in tightly covered container in refrigerator for up to 3 weeks. Fill greased muffin cups 2/3 full. Bake at 400 degrees for 18 minutes or until light brown. Note: Do not use flaked bran cereal.
