VODKA SAUCE (THE RECIPE EVERYONE ASKS ME FOR)

Cortlandt Manor, NY(Zone 6a)

Serves 3-4
1/2 onion
2 cloves garlic
1 lg. can of red pack whole tomatoes (grind them in a blender or food processor) (crushed tomatoes can pass, but I prefer to grind them because it makes a smoother sauce)
1/2 cup vodka
3T. olive oil
salt
basil
heavy cream (1/2-3/4 cup)
saute the onion in oil first and then add the garlic until just very slightly browned, add vodka and let it simmer down a bit . . .then add tomatoes, basil (not too much or will overwhelm the flavor of sauce) salt to taste,

turn off heat . . .add cream before serving (about 1/2 - 3/4 cup)

This recipe really needs the vodka to give it the best taste.

I often add sautéed mushrooms and/or chopped up fried bacon to this sauce

Serve over pasta!
