I do not usually do low fat baking - the decadent is more my style! But yesterday I was invited to dinner at a friend's house, and the only stipulation was that he is trying to reduce his cholesterol. So I took up the challenge, and here is a no cholesterol, very low fat, and low sugar (she is diabetic) dessert.
Chocolate Applesauce Cake
3 ounces unsweetened chocolate -- melted
-or- 9 tbls. cocoa
2 cups unsweetened applesauce
1 cup sugar (I reduced this to 1/2 c and it was fine)
2 cups unbleached flour
1 teaspoon baking soda
Preheat oven to 350. Spray Pam on a 7 x 12" baking dish.
Combine ingredients in the order they appear. Stir well. Spread the batter in the pan.
Bake for 25 minutes, or until top springs back in the center when lightly pressed.
I used a homemade apple-pear sauce, unsweetened, but still perhaps sweeter than just an applesauce. And I served it sprinkled with confectioner's sugar and drizzled with chocolate syrup (again homemade, but essentially hershey's syrup). I thought it came out very well. The texture is a lot more like a brownie than a cake, and it is very chocolaty.
