Sweet potato casserole

(Zone 6a)

Sweet potato casserole

3 cups of cooked mashed sweet potatoes [I used one big can, 29 oz]
1/2 cup sugar
3 eggs
1/2 tsp. vanilla
1/2 tsp. salt
1/4 cup softened margarine
1/8 cup milk

Topping:
1/2 cup brown sugar
1/3 cup flour
1 cup chopped pecans
3 tbs. Softened margarine


In a large mixing bowl, combine potatoes, sugar, salt, eggs, 1/4-cup maragine, vanilla and milk till smooth. Pour into a 9x13 pan sprayed with Pam. In a small bowl combine brown sugar, flour pecans, and remaining 3 tbs. of margarine. Top sweet potato casserole with crumbled mixture. Bake at 350 for 40 min. It can be assembled ahead and refrigerated and baked at 350 for 50 min.
