Sticky rabbit

Brewers, KY(Zone 6b)

Shoe, for your rabbit catch!

1 rabbit cut up
about 1/4 cup oil
flour
salt and pepper, cajun spice seasoning (or McCormik's Season-All if no cajun spice is at hand)
onion
bell pepper
garlic

*Salt, pepper and spice season rabbit
*coat rabbit in flour
*add oil in cast iron pot, heat oil to very hot, but not burning, peanut oil works best
*drop rabbit pieces in the pot, stirring fast so the flour will not burn.
*brown rabbit on all sides
*carefully add about a cup of water, be careful adding water to hot pot,add slowly
*add onions, bell pepper and garlic that are cut in slices
*Put lid on pot and simmer till rabbit is tender.
*I also like to add butter beans to the pot when rabbit is simmering.

Serve over rice! mmmmmmm...get a paper towel..sticky rabbit!
